Asparagus, Tomato and Avocado Salad

Yay for being home from school!

Yay for first trip to Costco in months!

Yay for having avocados, asparagus and cherry tomatoes in bulk!

Boo for not realizing I didn’t have basil.

But this was still delicious anyway. Avocado is one of my favorite foods. This is a good dish to take to a barbeque or just for lunch, to shake things up.

Asparagus, Avocado, and Tomato Salad

Adapted from this recipe
1 bunch asparagus
1 avocado
1-2 tomatoes, diced, or a bunch of cherry tomatoes, halved
Oregano
Basil
Salt + Pepper

Recipe:
Cut asparagus into 2-3″ segments
Steam asparagus lightly–microwave for a minute on high
Cut avocado into cubes
Dice tomato
Gently combine, adding salt, pepper, oregano, and basil to taste (the oregano is key!)

I can’t wait to try this again with the addition of fresh basil!

Tip: You don’t have to throw away the woody ends of the asparagus. Just peel them and they are perfectly edible. Conversely you can freeze the woody ends to make stock. Which will happen, of course. *Ponders the 2-year-old asparagus ends currently in the freezer*
